岗位职责:
1. Job Purpose
工作目标
- Work closely with Executive Chef and Sous to contribute to the Food and Beverage Strategy that supports overall hotel sales and guest satisfaction strategies for all food and beverage, meetings and banquets, and event revenue streams with empathy for the guest population (leisure/corporate/family) and brand
- 与行政总厨和副厨紧密合作,制定餐饮战略,支持酒店的整体销售和所有餐饮、会议和宴会的客人满意度战略,以及关注客人群体(休闲/企业/家庭)和品牌的活动收入流。
- Ensure strict compliance with all relevant Hygiene and Safety legislation requirements and Merlin code of safe working practices through effective due diligence.

- Recruit, develop and lead a positive, professional, and strong team, with a focus on guest satisfaction, quality of food and delivery and development of a high level of skills; act as a role model in leading this through the Merlin values.

- Provide the relevant information, tools and training to the team in order for them to deliver to a high standard

- Ensure there is a comprehensive cleaning programme which is executed well and accompanied with the relevant paperwork trail.

- Monitor, analyse and respond to changes in commodity costs to ensure we provide high quality products to our customers while contributing to profitable LLSHR

- Work closely with meeting and banquet managers to ensure all meetings and events run smoothly

- Liaise and collaborate with the Executive Chef and Executive Sous Chef and the Merlin Group commercial team to share ideas, concepts and secure bigger and better deals

- Collaborate and develop relationships with external suppliers to ensure LEGOLAND Shanghai Resort enjoys the best reputation in the industry and receives the services needed to ensure that the operational food and beverage team can deliver the highest quality products and targeted financial returns.

- Communicate effectively with the wider F&B resort team as well as the Group F&B team to ensure best practices/standards and procedures are available within Merlin Entertainment.

- Monitor and respond to expenses related to food and beverage equipment maintenance

- Implement custom order tables with face value levels to ensure consistent inventory holding levels based on business needs.

8. Health & Safety

Employees are responsible for the safety of themselves, their colleagues and guests (where appropriate), in line with the Group Policy (HS001) and the law. In particular, they must ensure that they follow safe working procedures for all work activities that they undertake, and they must not use any tools or equipment for which they have not been trained. Where incidents do occur, they must ensure that they are reported to their line manager and must cooperate with any investigation as appropriate.

- Requires progressive years of professional-level experience in kitchens, with demonstrable experience over 5years as Chef de Cuisine(or equivalent role/job experience).

- A proven track record in managing cost of sales required. Underpinning knowledge of food safety required and proven record to obtain industry standards at the highest level.

- Minimum 8years of work experience in China and be familiar with local diet preference

- A culinary degree or bachelor's in business, food service management (or equivalent education and experience) is required.
